The Experience
There’s something about Joshua Tree that naturally invites reflection.
The quiet. The wide-open sky. The way the light shifts across the rocks at sunset. It’s the kind of place that encourages you to slow down and reconnect—with yourself and with the people around you.
This past February, I had the pleasure of collaborating with my dear friend Robyn Marsh who owns Ginger Fitness on a multi-day wellness retreat hosted at the stunning Nxwhere California desert property just outside of Joshua Tree.
Guests spent their days hiking, training, and immersing themselves in wellness practices designed to strengthen both body and mind.
My role was simple: nourish the experience.
For five days, my team and I curated meals that supported the rhythm of the retreat—energizing breakfasts, vibrant lunches, and dinners designed to bring everyone together at the end of the day.
When Movement Meets the Menu
One of the things I immediately appreciated about working with Robyn was how aligned our philosophies are.
Wellness isn’t just about movement.
It’s also about how we fuel our bodies and how we gather around food.
For this retreat, every menu was designed with that in mind:
• Organic ingredients whenever possible
• No seed oils
• Nutrient-dense meals that still felt satisfying and joyful
• Thoughtful attention to dietary needs and allergies
With 24 guests and a range of dietary preferences—from pescatarian to vegan to dairy sensitivities—it was important that everyone felt welcome at the table.
That kind of care is what retreat cooking is really about.
Cooking Between the Rocks and the Stars
The retreat took place at Nxwhere California, a beautiful desert property designed for immersive group experiences. With its Glass House, Stone House, and sweeping views of the surrounding landscape, it felt like the perfect backdrop for a wellness gathering.
Our plan was to host most of the dining experiences outdoors—long communal tables, desert sunsets, and open skies.
But the desert had other ideas.
That week turned out to be unseasonably cold and incredibly windy.
On one particularly dramatic evening, the wind picked up so strongly that the power went out just as we were preparing dinner.
So we pivoted.
We quickly moved the dining experience indoors, adjusted the service flow, and continued preparing the meal without missing a beat.
Because if there’s one thing the hospitality world teaches you, it’s adaptability.
And even a desert power outage can’t stop the Chef Joann team from creating a memorable experience.
Fueling the Body (and the Adventure)
Cooking for a wellness retreat requires a different kind of balance.
Meals should feel nourishing without feeling restrictive. Energizing without feeling heavy.
Throughout the week, we served dishes like:
• Citrus beet salads with tahini herb vinaigrette
• Charred broccolini with lemon and garlic
• Grilled salmon with gremolata
• Vegan capellini with broccolini and chili-mint gremolata
• Mushroom bourguignon for plant-based guests
• Yogurt parfait bars and avocado toast breakfasts
• Fresh wraps and snack boxes packed for a group desert hike
Even dessert aligned with the spirit of the retreat—vegan chocolate mousse, coconut strawberry mousse cups, and spiced rice pudding.
Food that felt balanced, vibrant, and satisfying.
A Poolside Celebration Under the Desert Sky
Toward the end of the retreat, the weather finally softened just enough for one of my favorite moments of the week: a Saturday poolside celebration.
After several days of workouts and hiking, everyone gathered for music, cocktails, and a taco feast.
We started with passed bites like shrimp and veggie ceviche tostaditas and elote cups before guests moved into a vibrant taco bar featuring:
• Al pastor pulled pork
• Seared seasonal fish
• Smoky sweet potato and kale hash for vegan guests
Signature cocktails like the “Hot Ginger” pineapple smash and the “Cactus Mule” added a playful desert touch.
It was the perfect reminder that wellness doesn’t always mean restraint.
Sometimes it looks like laughter, music, and tacos under the desert sky.
The Magic of Retreat Hospitality
Over the course of five days, strangers became friends. Conversations stretched long after dinner plates were cleared. Guests lingered around the table sharing stories and soaking in the quiet beauty of the desert.
That’s always the goal for me. Because the most memorable retreats aren’t defined by the itinerary.
They’re defined by the moments that happen around the table.
And even when the desert winds pick up and the power goes out…
A great meal still finds a way to bring everyone together.
